Oh Yummy Sweet Potato Muffins!


Today I had a party at my friend Michelle's, and she made the Sweet Potato Muffins, which the recipe is in the Shelf Reliance THRIVE Cookbook. They were so delicious and festive for this time of year! 


1 Cup THRIVE Sweet Potatoes
1/2 cup apple juice or THRIVE Apple Drink
1/2 cup THRIVE Powdered Milk, rehydrated (1 1/2 tablespoons powder + 1/2 cup hot water)
1/2 cup vegetable oil
2 THRIVE Whole Eggs, rehydrated (2 tablespoons powder + 4 tablespoons water)
1/2 cup honey
1 1/2 cups THRIVE white flour
1 tablespoon THRIVE Baking Powder
1/2 teaspoon THRIVE Baking Soda
1/2 teaspoon THRIVE Iodized Salt
2 teaspoons cinnamon
1 cup butterscotch chips


Preheat oven to 350 degrees. Boil 3 cups of water and cook 1 cup of sweet potatoes for 15-20 minutes until soft and rehydrated, or until the water is nearly gone. No need to drain. 


Puree sweet potatoes, apple juice, prepared milk, oil, prepared eggs and honey in a food processor or blender.


In a large mixing bowl combine dry ingredients (flour through cinnamon). Add the sweet potato mixture to dry ingredients. Mix only until combined. Batter will be thick and sticky. Add butterscotch chips to slightly cooled batter. 


Spoon batter into muffin cups, filling about 2/3 full. Bake 23-25 minutes. 
Best if not overcooked to keep soft and moist.
